Ingrediants
1/2 tbs olive oil
Pork Tenderloin
2 cups of chicken broth
1/2 cup of balsamic vinager
1 cup of dried cranberries
dried rosemary
cauliflower head
Method:
1. heat oil in large skillet pan, and sear pork for 5 min making sure brown all over
2. add the chicken, vinager, cranberries, rosemary to the skillet
3. cook for 20-25 minutes, turning pork over every so often.
4. meanwhile, with 10 minutes to spare boil the cauliflower in pan
5. take pork out of pan, allow to rest and cover on chopping board with tin foil for 5 minutes
6. cook the cranberry sauce for a few more minutes, ensuring it is thick.
6. drain the cauliflower and mash with handheld blender.
7. plate up and enjoy!
i added a few roasted veggies to the dish.... (put tomatoes, peppers and almonds in a tray and baked it for 30 minutes)
